Preparation

  1. Combine the vinaigrette ingredients.
  2. Preheat the oven to 350°F (175°C) and cut 4 large squares of aluminum foil.
  3. Prepare the quinoa according to package instructions.
  4. Place 4 oz of salmon, 1/4 of the zucchini rounds, and 1–2 tablespoons of vinaigrette in the center of each piece of foil.
  5. Fold and seal the foil tightly.
  6. Bake for 15–20 minutes, or until the salmon is cooked through.
  7. Serve each portion of salmon and zucchini with 1/2 cup of quinoa.
