These chicken fajita lettuce wraps are a fresh, lower-carb take on fajitas. Instead of tortillas, crisp lettuce leaves hold juicy chicken, peppers and onions, adding extra vegetables to the meal along with plenty of crunch.

Preparation

  1. In a large bowl, toss the chicken with the olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, salt and black pepper until evenly coated.
  2. Heat a large skillet over medium-high heat. Add the chicken and cook for 5 to 6 minutes, stirring occasionally, until browned and nearly cooked through. Add the bell peppers and onion and cook for 5 to 6 minutes more, until the vegetables are tender-crisp and the chicken is fully cooked.
  3. Spoon the chicken fajita mixture into the lettuce leaves. Top with cilantro and serve with lime wedges, if desired.
