Preparation

  1. In a small bowl, whisk together Dijon mustard, apple cider vinegar, honey and minced garlic.
  2. Slowly drizzle in olive oil while whisking until the vinaigrette is well emulsified.
  3. Place chopped kale in a large bowl and pour the vinaigrette over it.
  4. Massage the kale gently with your hands for 2-3 minutes to soften the leaves.
  5. Add toasted sliced almonds, pumpkin seeds, dried cherries and apple to the kale and toss to combine.
  6. Adjust seasoning if needed and serve immediately or chilled.
