Preparation

  1. Combine cucumber, cherry tomatoes and red onion in a large bowl.
  2. Add minced garlic, olive oil, balsamic vinegar and Italian seasoning.
  3. Toss well to coat. Season with salt to taste.
  4. If you’re adding cheese, sprinkle goat cheese or feta on top before serving.
  5. Let sit for 5-10 minutes in the refrigerator before serving to allow flavors to blend.
