Salmon roasts alongside cabbage, onion and creamy white beans in this easy one-pan dinner. A simple dill-mustard dressing coats the vegetables and beans, adding brightness and tang while complementing the richness of the salmon.

Preparation

  1. Heat oven to 425°F. Line a large rimmed baking sheet with parchment paper.
  2. Place cabbage and onion on the prepared baking sheet. Drizzle with 1 Tbsp olive oil and season with a pinch of salt and pepper. Toss to coat and spread into an even layer. Roast for 15 minutes.
  3. Meanwhile, whisk together the remaining ½ Tbsp olive oil, Dijon mustard, apple cider vinegar, garlic, remaining ¼ tsp salt and remaining ¼ tsp pepper in a large bowl.
  4. Add the cannellini beans to the bowl and toss gently to coat. 
  5. Remove the baking sheet from the oven and stir the cabbage mixture. Add the beans and any remaining dressing from the bowl; toss lightly to combine.
  6. Nestle the salmon fillets among the vegetables and beans.
  7. Roast until the salmon flakes easily with a fork and reaches an internal temperature of 145°F, 10 to 12 minutes.
  8. Sprinkle with dill and serve immediately.
