Preparation

Prep the tzatziki sauce in advance: 

  1. With a blender or food processor, blend sauce ingredients until smooth. 
  2. Cover and refrigerate for up to 3 hours.

Prep kabobs:

  1. Mix the beef, chopped onions, garlic, and spices until well combined.
  2. Divide the mixture into 12 oblong-shaped patties and shape them onto 6-inch skewers.
  3. Grill until the beef is fully cooked and no longer pink.
  4. Steam the vegetables for 3 minutes.
  5. Toss the vegetables with olive oil, 1/2 teaspoon of salt, and pepper to taste.
  6. Serve 3 skewers per portion with tzatziki dipping sauce and a cup of vegetables.
