This protein-packed breakfast is easy to prep ahead and scale up for the week. Frozen berries work especially well—just add them straight from the freezer and they’ll soften overnight. For variety, try swapping in your favorite fruits and nuts.

Preparation

  1. In a medium bowl, whisk together the Greek yogurt, milk, vanilla and maple syrup until smooth.
  2. Stir in the chia seeds until evenly distributed.
  3. Let stand for 5 minutes, then stir again to break up any clumps.
  4. Cover and refrigerate for at least 4 hours or overnight.
  5. Stir before serving.
  6. Divide the pudding between two bowls and top with the mixed berries and slivered almonds.

Variation: Replace the berries with diced peaches, nectarines or mango, or swap the almonds for chopped walnuts or pecans.
