High-protein no-bake “cheesecake”

If you’re craving something creamy, this easy no-bake dessert will hit the spot. Make it ahead of time so you can enjoy it as a snack or light breakfast. Top with fruit like blueberries, raspberries and strawberries to add fiber and flavor.

Preparation

  1. Use a hand blender or standing blender to blend cottage cheese until smooth. Add honey and vanilla extract and mix well. 
  2. Pour cottage cheese mixture evenly into 4 small glass jars. 
  3. Break graham cracker squares into rectangles. Push vertically into cottage cheese mixture. 
  4. Refrigerate overnight. 
  5. Add fruit garnish (optional) and eat directly out of jars.
