This lean beef taco salad delivers all the flavors of taco night in a fresh, satisfying bowl. Seasoned ground beef, crisp lettuce, juicy tomatoes and a simple lime dressing make it an easy weeknight dinner that comes together quickly.

Preparation

  1. Heat 1 Tbsp olive oil in a large skillet over medium-high heat.
  2. Add the ground beef and cook for 5-6 minutes, breaking it into crumbles, until browned.
  3. Stir in the chili powder, cumin, paprika, garlic powder, onion powder, salt and pepper. Add the water and cook for 2-3 minutes, stirring occasionally, until the mixture is well coated and slightly thickened. Remove from the heat.
  4. In a large serving bowl, whisk together the lime juice, olive oil, honey and salt.
  5. Add the romaine, tomatoes, black beans, corn, avocado and red onion and toss gently to coat.
  6. Divide the salad among four bowls. Top each serving with the warm taco beef and crushed tortilla chips. Serve immediately.

Recipe Tip: For extra heat, add a finely chopped jalapeño to the salad or a pinch of cayenne pepper to the beef seasoning.
