Tender chicken and crisp vegetables give this chopped salad plenty of freshness and crunch. Quinoa, toasted almonds, and feta make it feel substantial enough for dinner, while the lemony dressing keeps each bite bright and balanced.

Preparation

  1. In a bowl, combine lemon juice, 1 Tbsp olive oil, minced garlic, Dijon mustard, honey, ¼ tsp each salt and pepper to make the dressing; whisk well and set aside.
  2. Marinate chicken breasts in lemon zest, minced garlic, r¼ tsp each salt and pepper and 1 Tbsp olive oil for 15 minutes.
  3. Preheat grill or grill pan over medium-high heat. Grill chicken breasts 5-6 minutes per side until cooked through and juices run clear. Let them rest for 5 minutes, then chop into bite-sized pieces.
  4. Chop the romaine and baby spinach mix into bite-sized pieces if not already small.
  5. In a large bowl, toss the chicken, romaine and baby spinach mix, cooked quinoa, cherry tomatoes, cucumber, shredded carrots, almonds and feta.
  6. Pour dressing over salad and toss to combine evenly.
  7. Serve immediately.
