Ingredients

  • 2 cups frozen cauliflower rice
  • ½ tsp lime juice
  • 2 Tbsp cilantro
  • ½ cup black beans, drained and rinsed
  • 1 plum tomato, chopped
  • 2 Tbsp guacamole, store-bought
  • 2 Tbsp shredded cheddar cheese (or plant-based alternative)
  • 10 tortilla chips, crumbled
  • Extra protein (optional): grilled lean steak, chicken, shrimp or tempeh
  • Optional: Shredded lettuce and more cilantro

Preparation

Prepare cauliflower rice according to instructions on the package. Stir in lime juice and cilantro. Top with beans, tomato, guacamole, cheddar, tortilla chips and extra protein, if using. Garnish with lettuce and cilantro if desired.
