These chicken burrito bowls are designed for easy weekday lunches or dinners. Seasoned chicken, cilantro-lime rice and simple toppings hold up well in the refrigerator, making them a practical meal-prep option with plenty of flavor.

Preparation

 

  1. In a medium saucepan, combine the rice and chicken broth. Bring to a boil, reduce the heat to low, cover and cook for 18 minutes or until the liquid is absorbed. 
  2. Remove from the heat and let stand for 5 minutes. Fluff with a fork, then stir in the lime juice and cilantro.
  3. While the rice cooks, heat 2 tsp olive oil in a large skillet over medium-high heat.
  4. In a bowl, toss the chicken with the chili powder, cumin, garlic powder, salt and black pepper. 
  5. Add the chicken to the skillet and cook for 6 to 8 minutes, stirring occasionally, until browned and cooked through to 165°F.
  6. Add the remaining 2 tsp olive oil, black beans and corn to the skillet. Cook for 2 to 3 minutes until heated through.
  7. Divide the rice among four meal-prep containers. Top evenly with the chicken mixture. Let cool completely before sealing and storing in the fridge. Store the tomatoes and lime wedges separately.
  8. Storage and assembly: Refrigerate for up to 4 days. Reheat the rice, chicken, beans and corn until hot. Cut the avocado just before serving, then top the bowl with the tomatoes, avocado and a squeeze of lime. 
  9. Make-ahead avocado option: Mash the avocado with 1 to 2 tsp lime juice and a pinch of salt. Divide among four small airtight containers. Press plastic wrap directly onto the surface of the avocado before sealing and refrigerating.
