One-pan lemon garlic chicken with green beans

This one-pan lemon garlic chicken is bright, simple and weeknight-friendly. Chicken cutlets cook quickly, finishing in a light lemon-garlic sauce with tender-crisp green beans.

Preparation

  1. Pat the chicken dry. Season both sides with paprika, onion powder, salt and black pepper.
  2. Heat 2 tsp olive oil in a large skillet over medium-high heat. Add the chicken and cook 3-4 minutes per side, until golden and cooked through. Transfer to a plate and cover loosely.
  3. Add the remaining 1 tsp olive oil to the skillet. Add green beans and cook 4-5 minutes, stirring occasionally, until tender-crisp.
  4. Reduce heat to medium. Add butter and garlic; cook about 30 seconds until fragrant. 
  5. Pour in chicken broth and lemon juice, then add red pepper flakes (if using). Stir, scraping up browned bits from the pan.
  6. Return chicken to skillet. Simmer 2-3 minutes, spooning sauce over the top, until everything is heated through and lightly coated.
  7. Sprinkle with parsley and serve immediately.
