Preparation

  1. Heat oven to 400°F and line a rimmed sheet pan with parchment paper.
  2. Scatter cherry tomatoes on one side of baking pan and drizzle with olive oil and a pinch of pepper.
  3. Pat salmon dry and place skin-side down on the pan. Spread 1 Tbsp pesto evenly over each fillet.
  4. Roast for 12-15 minutes, until the salmon flakes easily with a fork and tomatoes are softened and lightly blistered.
  5. Drizzle with lemon juice and garnish with basil or Parmesan, if desired. Serve immediately.
