Preparation

  1. Place the Dutch oven over medium-high heat and spray the bottom with nonstick cooking spray. 
  2. Add chopped onion and garlic and sauté 6-7 minutes, or until onions are lightly browned.
  3. In a separate medium-size bowl, mix the ground turkey with chili powder, cumin, and cayenne pepper.
  4. Add mixture to Dutch oven and cook until browned, stirring often. 
  5. Stir in pumpkin, tomato sauce, brown sugar, mustard, salt, and pumpkin pie spice. Add 1 quart of water and simmer for approximately 1 hour, stirring every 15 minutes.
  6. Serve with a dollop of nonfat Greek yogurt and a dash or two of hot sauce.
