Sweet, toasty cashews and soy nuts get coated in sesame honey for a crunchy, budget-friendly snack with extra protein and a classic roasted flavor.

Preparation

  1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. In a medium bowl, stir together the honey, water, sesame oil, cinnamon, salt, and vanilla until smooth.
  3. Add the cashews and soy nuts, then mix until everything is evenly coated.
  4. Spread the mixture in one layer on the prepared baking sheet.
  5. Bake for 12 to 15 minutes, stirring once halfway through, until lightly browned and fragrant.
  6. Sprinkle the sesame seeds over the nuts and stir gently while still warm.
  7. Let cool completely on the pan so the coating firms up, then break apart and divide into four portions.
