Preparation

  1. Heat 4 tsp oil in a skillet over medium-high heat. Add red pepper, half of the garlic, shrimp, salt and pepper.
  2. Cook 2-3 minutes. Cook until shrimp is opaque. Set aside.
  3. Add remaining oil and garlic, cook 30 seconds. Add zucchini noodles and cook 11/2 minutes.
  4. Toss in shrimp and tomatoes and a squeeze of lemon. Remove from heat and serve.
