Preparation

  1. Beat the eggs with salt and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Add the broccoli, onions, and tomatoes, and cook until softened.
  4. Add the eggs to the skillet.
  5. As the eggs begin to set, gently pull them across the pan with a spatula, forming large, soft curds.
  6. Add the mozzarella cheese.
  7. Continue cooking—pulling, lifting, and folding the eggs—until thickened, the cheese is melted, and no visible liquid egg remains.
  8. Serve with 1/2 cup of melon.
