Preparation

  1. Add chickpeas, kidney beans, and pinto beans to a large bowl.
  2. Add red onion, green onions, garlic, and parsley. Stir to combine.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, lime juice, Dijon mustard, sugar, and salt.
  4. Pour dressing over the bean mixture and toss well to coat.
  5. Refrigerate for at least 15 minutes before serving to allow flavors to develop. Stir again before serving.
