This classic Niçoise salad layers tuna and eggs with tender potatoes and crisp green beans for a dish that feels both elegant and substantial. Along with fiber and potassium, the vegetables contribute extra protein, making this colorful salad even more satisfying.

Preparation

  1. Boil baby potatoes in salted water until tender, about 12-15 minutes. Drain and let cool.
  2. Blanch green beans in boiling water for 2-3 minutes until bright green and crisp-tender. Immediately transfer to ice water, drain.
  3. Arrange butter lettuce or mixed greens on a large serving platter.
  4. Neatly arrange tuna, quartered eggs, green beans, baby potatoes, cherry tomatoes, olives, radishes, and cucumber in separate sections over the greens.
  5. In a small bowl, whisk together red wine vinegar, Dijon mustard, and minced garlic.
  6. Slowly drizzle in olive oil while whisking until emulsified. Stir in thyme, season with salt and pepper.
  7. Drizzle vinaigrette evenly over the arranged salad just before serving.
