A creamy, make-ahead chia breakfast (or snack) with soy milk, vanilla and a bright berry topping. Thick, filling and easy for busy mornings.

Preparation

  1. In a large bowl, whisk together the soy milk, maple syrup, vanilla extract and salt until well combined.
  2. Stir in the chia seeds until evenly mixed. Let sit for 5 minutes, then whisk again to break up any clumps.
  3. Cover and refrigerate for at least 4 hours, or overnight, until thick and pudding-like.
  4. When ready to serve, stir the pudding well and divide it evenly into 4 bowls or jars.
  5. Top each serving with the mixed berries and chopped almonds.
  6. Serve chilled. If the pudding is too thick, stir in a splash of soy milk before serving.
