Start your day with a satisfying veggie breakfast burrito packed with non-starchy veggies, black beans and eggs. A mix of whole eggs and egg whites delivers more than 20 grams of protein per burrito while keeping saturated fat in check. Preparation

  1. Heat the olive oil in a large nonstick skillet over medium heat. Add the bell pepper, zucchini and onion. Cook for 6 to 8 minutes, stirring occasionally, until the vegetables are tender.
  2. Stir in the salt, black pepper, smoked paprika, cumin and garlic powder. Cook for 30 seconds, stirring constantly, until fragrant.
  3. Add the black beans and spinach and cook for 1 to 2 minutes, stirring occasionally, until spinach is wilted and the black beans are heated through.
  4. In a medium bowl, whisk together the eggs and egg whites.
  5. Push the vegetable mixture to one side of the skillet. Pour the egg mixture into the empty side and cook, stirring gently, until softly scrambled and just set, about 3 to 4 minutes.
  6. Stir the eggs into the vegetables and beans. Remove from the heat and fold in the cheddar cheese.
  7. Warm the tortillas according to package directions.
  8. Top evenly with the egg mixture.
  9. Fold in the sides of each tortilla and roll tightly into burritos. Serve warm with salsa, if using.

Optional freezing note: For best results, cook the vegetables until excess moisture has evaporated and allow the burritos to cool completely before wrapping and freezing. Wrap them tightly in foil and seal in a freezer bag; freeze for up to 3 months. To reheat, remove from foil and microwave for 2 to 3 minutes, flipping halfway through.
