This cozy one-pan pork tenderloin pairs juicy, tender pork with sweet apples and caramelized onions. A touch of Dijon mustard and fresh thyme add savory depth, making it an easy dinner that’s elegant enough for guests but simple enough for a weeknight.

Recipe tip: For extra sweetness and color, use a combination of one tart apple, such as Granny Smith, and one sweet apple, such as Honeycrisp.

Preparation

  1. Pat the pork tenderloin dry and season all over with the salt and pepper.
  2. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork and sear for 2 to 3 minutes per side until browned. Transfer to a plate.
  3. Reduce the heat to medium. Add the onion and cook for five minutes, stirring occasionally. Add the apples and cook for 3 to 4 minutes more until they begin to soften.
  4. Stir in the garlic and thyme and cook for 30 seconds.
  5. Whisk together the chicken broth, Dijon mustard and apple cider vinegar. Pour into the skillet and scrape up any browned bits from the bottom.
  6. Return the pork to the skillet, nestling it into the apple-onion mixture.
  7. Transfer the skillet to a 400°F oven and roast for 15 to 18 minutes, or until the thickest part of the pork reaches 145°F.
  8. Let the pork rest for five minutes before slicing.
  9. Slice the pork and serve topped with the apples, onions and pan sauce. Garnish with additional thyme if desired.
