Preparation

  1. Fill a shallow dish or pie plate with warm water.
  2. Submerge one rice paper wrapper for 15-20 seconds until pliable, then lay flat on a clean surface.
  3. Layer red cabbage, mango, spinach, tuna, mint, and shredded carrot in the center of the wrapper.
  4. Fold in the sides, then roll tightly from the bottom up, burrito-style.
  5. Repeat with remaining wrappers and fillings.
  6. Serve immediately with peanut sauce for dipping.
