  1. Microwave frozen artichoke hearts and spinach until defrosted, according to package instructions.
  2. While vegetables are in the microwave, pour cottage cheese into a blender or food processor. Blend until smooth.
  3. Drain vegetables thoroughly, squeezing out any excess moisture. Chop into small pieces.
  4. In a medium skillet, heat olive oil over a medium flame. Saute defrosted artichoke hearts and spinach so remaining liquid evaporates. Season with salt.
  5. Add blended cottage cheese and mix into vegetables.
  6. Add Parmesan cheese and garlic powder; mix well.
  7. Simmer for around 5 minutes, stirring regularly to help cheese melt throughout.
  8. Pour into a bowl and serve immediately.
