Ingredients 

  • 2 cups frozen cauliflower rice 
  • ½ tsp lime juice 
  • 2 Tbsp chopped cilantro 
  • ½ cup black beans 
  • 1 plum tomato, chopped 
  • 2 Tbsp guacamole, store-bought 
  • 2 Tbsp shredded cheddar cheese (or plant-based alternative) 
  • 10 tortilla chips, crumbled 

Preparation 

Prepare cauliflower rice according to instructions on the package. Add lime juice and cilantro. Mix together. Then top with black beans, tomato, guacamole, cheese, and tortilla chips. Optional: add extra lettuce, more cilantro, or protein, such as grilled lean steak, chicken, shrimp or tempeh.
