Pumpkin bread (video)

Pumpkin bread

Makes 12 servings | Cook: 50 min

Ingredients 

  • 1 cup pumpkin purée, canned or fresh 
  • 1/3 cup mini chocolate chips or chopped walnuts (optional) 
  • 1/3 cup maple syrup, sugar-free 
  • ½ tsp baking soda 
  • 1 tsp baking powder
  • ½ tsp salt 
  • ¼ cup applesauce, unsweetened 
  • 2 eggs 
  • ¼ cup canola oil 
  • 2 tsp pumpkin pie spice 
  • 1 tsp vanilla 
  • 2 cups whole wheat flour 

Preparation

Mix dry ingredients and wet ingredients in separate bowls. Add dry ingredients to wet and stir to combine. If adding in optional ingredients, mix in as well. Preheat oven to 325 degrees Fahrenheit. Spray loaf pan with nonstick cooking spray. Add batter and bake about 50 minutes or until a toothpick insterted comes out clean.
