Shaved Brussels sprouts salad

Makes 4 servings | Prep: 5 min 

Ingredients

  • ¼ cup extra virgin olive oil
  • ¼ cup fresh lemon juice
  • ½ tsp Dijon mustard 
  • 1 tsp honey
  • 4 cups shaved brussels sprouts
  • ½ cup chopped walnuts, toasted
  • ½ cup cranberries 

Preparation

In a medium bowl, whisk together olive oil, lemon juice, mustard and honey. Add brussels sprouts, walnuts and cranberries and toss well. Let rest for 15 minutes and serve. Store refrigerated in airtight container for up to 4 days.
