Preparation

  1. In a small bowl, stir spices. 
  2. Place chicken in slow cooker and sprinkle with half of seasoning mixture. Flip chicken with a fork and sprinkle with other half of seasoning mixture. Pour tomatoes, chilies, and chicken broth over the chicken in the slow cooker. 
  3. Cover and cook on low for 8-10 hours, or on high for 3-4 hours. Chicken may break apart easily with fork once cooked. 
  4. This chicken is flavorful and extremely versatile. Try these healthy serving suggestions! Serve plain with a side of brown rice. Serve as a salad over a bed of greens. Use as sandwich meat on a whole wheat bun. Use for a taco on a whole-wheat tortilla.
