Dark chocolate peanut butter banana cookies

Ingredients

  • Nonstick cooking spray
  • 2 very ripe bananas
  • 1 tsp vanilla extract
  • ½ cup natural peanut butter
  • 2 cups quick-cooking oats
  • ½ tsp baking powder
  • ½ tsp ground cinnamon
  • 1/3 cup dark chocolate chips

Preparation

Preheat oven to 350°F. Line a baking sheet with parchment paper, or lightly coat with cooking spray. Mash bananas with vanilla extract in a bowl. Stir in peanut butter until combined. In a separate bowl, stir together oats, baking powder and cinnamon. Add banana mixture to oats and stir until fully combined. The dough will be thick. Stir in dark chocolate chips. Drop by the spoonful on prepared baking sheet. Bake for 10 to 12 minutes, or until lightly browned and firm to the touch. Let the cookies cool on the baking sheet for 3 minutes. Transfer the cookies to a wire cooling rack to cool completely.
