Garbanzo bean curry with carrots

In the mood for comfort food? Enjoy a hearty dish with lots of flavor, fiber, and protein.

Ingredients

  • ½ cup chopped cauliflower
  • ½ cup grated carrots
  • ½ cup pea pods
  • 2 tsp curry powder
  • ½ cup crushed no-salt-added tomatoes (not drained)
  • ½ cup canned garbanzo beans, rinsed and drained
  • 1 Tbsp raisins
  • 1 green onion, chopped
  • Dash of salt

Instructions

In a medium saucepan, cook cauliflower, carrots, pea pods, curry powder, tomatoes, garbanzo beans, and raisins, covered, for 10-12 minutes (stirring occasionally). Top with green onions and a dash of salt.
