Gingerbread oatmeal

’Tis the season for cozy and comforting breakfasts. This simple oatmeal recipe is filled with fiber and warm winter spices.

Makes 1 serving | Prep: 3 min | Cook: 8 min

Ingredients

  • 1 cup low-fat milk
  • ½ cup rolled oats
  • 1 tsp brown sugar
  • 1 tsp molasses
  • 1 tsp vanilla extract
  • ½ tsp ground ginger
  • ½ tsp cinnamon
  • 1/8 tsp ground allspice
  • 1/8 tsp ground clove
  • 1 Tbsp chopped pecans

Preparation

  • Bring milk to a boil in a small saucepan. Stir in oats and reduce heat to medium. Cook for 5 minutes, stirring occasionally. 
  • Once the oatmeal has thickened, turn the heat to low. Stir in brown sugar, molasses, vanilla extract, ground ginger, cinnamon, allspice and clove. Cook for an additional minute. 
  • Remove from heat and transfer oatmeal to a bowl. Top with chopped pecans.
