Caprese skewer
Prep Time 5 minutes

Preparation

  1. Slice 1 mozzarella string cheese into 5 short pieces. 
  2. Slide one piece onto a skewer. 
  3. Follow with 1 small cherry tomato and a piece of fresh basil. 
  4. Repeat 4 times. Drizzle with balsamic vinegar.

  1. Toss together drained canned salmon, cannellini beans, thinly sliced red onion, red wine vinegar and  Dijon mustard. 
  2. Serve in 2 romaine lettuce leaves.


If you use low/lower sodium products and rinse the beans, you can reduce the sodium down to about 300 mg.
