Caprese snack

When the weather heats up, refreshing snacks hit the spot. These three easy-to-make munchies can help satisfy and keep you fueled this summer.

Caprese skewer

Ingredients

  •  1 mozzarella string cheese stick
  • 4 cherry tomatoes
  • 4 basil leaves
  • 4 skewers
  • Balsamic vinegar

Preparation

  • Slice 1 mozzarella string cheese into 5 short pieces. 
  • Slide one piece onto a skewer. 
  • Follow with 1 small cherry tomato and a piece of fresh basil. 
  • Repeat 4 times. Drizzle with balsamic vinegar.

  • Sprinkle with chopped fresh mint.

  • ½ tsp Dijon mustard

  • Toss together drained canned salmon, cannellini beans, thinly sliced red onion, red wine vinegar and  Dijon mustard. 
  • Serve in 2 romaine lettuce leaves.
