This vegetarian shepherd’s pie features a hearty lentil and vegetable filling topped with creamy mashed sweet potatoes. Turnips, carrots and peas add savory flavor and texture to the filling, while the golden topping makes it a comforting meal that’s perfect for a cool evening.

Serving suggestion: For a higher-protein meal, serve with baked tofu or a sprinkle of hemp hearts.

Preparation

  1. Preheat the oven to 400°F. Place the sweet potato chunks for the topping in a large pot and cover with water. Bring to a boil and cook for 12 to 15 minutes, or until very tender.
  2. While the potatoes cook, heat 1 Tbsp olive oil in a 10- to 12-inch oven-safe skillet or Dutch oven over medium heat. Add the onion, carrots, celery and turnips and cook for 8 to 10 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Add the garlic, tomato paste, thyme and smoked paprika. Cook for 1 minute, stirring constantly.
  4. Stir in the lentils, broth, peas, Worcestershire sauce, salt and pepper. Simmer for 5 to 7 minutes, or until the turnips are tender and the mixture is hot throughout. 
  5. Drain the cooked sweet potatoes for the topping. Return them to the pot and mash with 2 Tbsp olive oil, black pepper and garlic powder until smooth.
  6. Spread the mashed sweet potatoes evenly over the lentil filling. Use the back of a fork to create a few ridges on top.
  7. Bake for 10 to 15 minutes, until the filling is bubbling around the edges. Switch the oven to broil and broil for 2 to 4 minutes, until the topping is lightly browned in spots. Watch carefully to prevent burning.

*If using dried lentils, substitute 1 cup dried brown or green lentils and 3 cups low-sodium vegetable broth. Simmer the filling for about 25 to 30 minutes, or until the lentils are tender, before proceeding with the recipe.
